Carol Burgess and Ray Hartmann, along with Mary Ellen Haggerty and Ali Kalish, organized the taco night on August 17th.
We tasted tacos at a number of places and settled on those from Panchero’s Mexican Grill right up the street from our picnic spot at Brookview. Panchero’s make their tortillas from scratch and then lightly grill the soft tortillas before adding the accompanying goodies---chopped chicken, pulled pork, mild, medium and hot tomato salsa, corn salsa, lettuce, cheese, and sour cream filled the tortillas.
Included in our Taco feast were Mexican rice and black beans along with dark blue tortilla chips---yummy! Marco, Panchero’s manager, brought in electric heaters to keep food warm as we served---and then Marco even helped us with the serving! Behind the table workers included Carol & Ray, Mary Ellen and Ali, Ken Ernst, and our ULLR guest, Wendy Burton. We were really kept busy!
To add to the ambience, authentic Mexican music by “Trios Mexicanos” greeted ULLRs as they approached the food line to fill their plates. The music along with speakers was provided by local musician Jack Weston, another of Carol & Ray’s guests.
Rounding out the night, Bruce Warner subbed for Prez John Vogt and conducted the regular ULLR meeting; the Foundation sold dessert goodies; beer, wine and sodas were quaffed. Another ULLR picnic success! |
